Have you already baked many cakes and your cakes impress people in your area? Are you passionate about wedding cakes with modern design, but without formal pastry training? Are you considering turning your hobby into a profession? Or are you already a professional but want to perfect your cakes with new techniques?
Then the „Wedding Cake Basic Course – Fondant“ is just right for you! After numerous travels around the world, I have found that the most delicious cakes are at home in Austria and France. And where is the most beautiful cake design at home? In Great Britain, Australia, and the USA! Following my motto „Learn from the best!“, I studied the inner workings of cakes in Austria and France and the beautiful exterior with cake designers from English-speaking countries. These design techniques are hardly taught in Austria so far, but are in high demand due to a flood of stunning cake images on social media.
After 10 years and over 1000 beautiful AND delicious cakes, I am now passing on this knowledge from scratch. We start with baking various cake batters, creating suitable fillings, going through all steps of carving, filling, and icing cakes together. We take enough time to practice covering and stacking the cakes and explore all dos & don’ts in the world of fondant cakes. Finally, our cakes will be decorated and expertly adorned with fresh flowers.
Participants will take home a 4-tier fondant cake.
To round off the cake decorating portfolio, I recommend following up with „Wedding Cake Basic Course – Naked Cakes“, „Wedding Cake Perfection – Decor“, where working with royal icing, edible gold leaf, calligraphy, and wafer paper will be taught, as well as „Wedding Cake Perfection – Sugar Flowers“, where you will learn how to make various flowers and blossoms out of sugar.

FAQ
The course can also be attended by pastry chefs without formal training or by amateurs. However, you should have completed the basic course beforehand.
In order to ensure the best possible supervision ratio, only a small group with a limited number of participants.
The course takes place in the professionally equipped studio bakery in Maria Enzersdorf/Mödling in the south of Vienna.
Right next to the studio is the newly opened Hotel Gabrium. You can find more information about the hotel and booking here!
During the course we will provide drinks, coffee and lunch.
From experience, I can say that traveling and taking courses abroad to learn decorating techniques were significantly more expensive - and it was worth it. Another important point is the tuition you save. Fixing a failed wedding cake, compensating the customer, and dealing with bad reviews can be very costly. Time is also a factor in this training: you get the experience of 10 years in the cake business concentrated in just a few days. Therefore, several weeks of vacation or educational leave are not necessary.
